GARDEN MINESTRONE WITH KALE
Serves 2 in 50 minutes

4 cups vegetable broth
1 14½-ounce can diced tomatoes with juice
1 15-ounce can garbanzo beans, rinsed and drained
1 large carrot, chopped
3 ribs celery, chopped
½ sweet onion, chopped
3 cloves garlic, crushed
2 cups baby kale, loosely packed
1 handful fresh basil, shredded (optional)
salt and black pepper
1 Combine all ingredients except kale, salt, and pepper in a large soup pot and bring to a boil. Reduce heat and simmer, covered, for 40 minutes.
2 Add kale and cook for 10 more minutes. Season with fresh basil and salt and pepper to taste.
